About Staphylea colchica Stev.

Staphylea colchica Stev., commonly known as the Caucasian bladdernut or Colchis bladdernut, and called jonjoli (or djondjoli, ჯონჯოლი in Georgian), is an ornamental shrub in the Staphyleaceae family. It is native to western Georgia, and its binomial name comes from the ancient western Georgian kingdom of Colchis. This deciduous species grows as a small tree reaching 6 to 10 feet in height and grows rapidly. It grows best in well-drained, partly shaded locations. While it produces fragrant flowers and fruit, it often spreads through suckers. In Georgia, its buds preserved in brine, seasoned with raw onion and vegetable oil, make a common local dish.
