Hydnellum suaveolens, commonly called the fragrant hydnellum mushroom, is a species of fungus. It has a funnel-shaped cap, typically 5–15 cm (2–6 inches) in diameter. As its common name suggests, this fungus has a strong scent of anise or peppermint. It is most often found growing beneath conifers, and it is classified as inedible. When gas chromatographic-mass spectral analysis was performed on diethyl ether extracts from fresh specimens of this fungus, researchers found that p-anisaldehyde made up 30% and coumarin made up 62% of the total volatile odor compounds it produces.
